‘Great flavour, delicate tang’: the best supermarket sourdough, tasted and rated by Thomasina Miers | Sourdough

I Make the fermented dough every week at home, so I feel a good judge in the flavor and texture of this type of bread. In general, I was surprised by the pleasure of a handful of this loave, which had a good tissue, good flavor and cute opening. However, it was interesting to discover that nothing had to announce the salt content in their loaves, because this has an amazing significant impact on the total flavor.

None of the packages of any of these bread, with the exception of the wilderness, spoke about pesticides, pesticides, which are one of the things that I ask about when to buy bread these days – certainly part of the point of spending more money is to know that the loave is made of flour without this toxic pregnancy? It was great to see supermarkets to become more involved in making better bread as well, and that Jason’s and Wildfarmed had reached many high street shelves.

The best fermented dough supermarket

Best all round:
Jason is the great white fermented dough

£ 2 for 450 grams in OCADO (44p/100g)
2 pounds for 450 grams in Tesco (44p/100g)
★★★★

This delicious loaf looked the part and it seemed that he had a real source behind it. It had a great taste translated into great crumbs for our fish fingers the next week.

Better boasting:
Frying dough bread white with a secret

4 pounds for 600 grams in Waitrose (67p/100g)
★★★★

To a large extent the best look of the group. Wonderful flavor, tang is sensitive and fragmented, she remained fresh for several days, and made wonderful crumbs and thornsa after that. Very good price for the price.

The rest …

Waitrose San Francisco Style Bloomer

2.35 pounds for 400 g in waitrose (59p/100g)
★★★ ☆

This Bloomer had a gentle fermented dough flavor, and a great shape, but with very dense crumbs. General flavor in general, and lasted more than three or four days.

Cooperation does not resist fermented dough

2 pounds for 360g in the store in CO-OP (56p/100g)
★★★ ☆

A beautiful -looking loaf, which appears to be made from the 12 -year -old. The flavor was fine and the texture was good, with nice holes and air in crumbs.

Marks & Spence San Francisco similar to the fermented dough

2.65 pounds for 400 g in the store in M & S (66p/100g)
★★★ ☆☆

This loaf had a San Fran, a nice open crumb, not a bad flavor compared to most of the supermarkets. Tang Light was present but dull (it seems that he was made with a 30 -year -old).

Taste

2.10 pounds for 400 g in Sainsbury’s (53p/100g)
★★★ ☆☆

Interestingly, this contains some rye flour, to give it a hint of the additional flavor, but it is a flat loaf and an unattractive square compared to some competition, and with a very dense opening as well. No masses of flavor, too.

Aldi White Al -Alabin Street, fermented

1.89 pounds for 400 g in the store in Aldi (47p/100g)
★★★ ☆☆

This loaf had an impressive texture and open, and it was a very cool look. There were no ingredients listed on the back, but they definitely taste as they were not a straight white loaf. You can do with more salt, though.

Lidl Lidle White Sourdough Loaf

1.99 pounds sterling for 600 g in the store in Lidl (33p/100g)
★★ ☆☆☆

A very uniform loaf with a very solid texture. I really didn’t like the flavor, though.

Tesco dough dough Bloomer

2.10 pounds for 400 g in Tesco (53p/100g)
★★ ☆☆☆

This loaf is described as “refreshing” and “golden”, but in practice, it was very solid with thick crumbs, and had a very few flavor and a kind of bright washing that felt unlike the typical fermented dough.

Morrisons is the best white fermented dough

2.10 pounds for 400 g in Morrison (53p/100g)
★ ☆☆☆☆

I did not like the appearance and shape of this loaf, and I was not very impressed with its flavor. In general, I didn’t like it.
