‘The closest I tried to homemade’: the best supermarket mayonnaise, tasted and rated | Sauces and gravies

II spent my whole life in making mayonnaise from scratch, and my nose is transformed into the versions purchased from the store with a chef -like snobbery, but after this taste, I am ready to accept that Mayonnaise Jarred is a valid addition to the store board.

I wanted to think about the depth of what we want from mayonnaise. According to Harold McGI in On food and cookingMayonnaise is an emulsion of two liquids that do not usually combine – oil and water – settled by the egg yolk, which allows the oil to form small drops dispersed in the water and creates this wonderful, unusual texture, which we love.

I think the texture is a priority number 1, but, of course, the flavor and the quality of the ingredients are also important factors. Mayonnaise lipids and Umami brutality adds to our food, making the gentle ingredients desirable. I prefer the mayonnaise gently flavored with a hidden tang from lemon juice or white wine vinegar, but most options that are purchased from stores, including “excellent products”, use the soul vinegar, giving them the smell of pickled eggs in the slide slices.

Mayonnaise is not intended to be eaten directly from the jar, but tasting this method was invaluable, because it allows me to see how every brand might have sweetness or more distinctive or noticeable content. I also took samples from every May with power papers and chips to see how they acted in the circumstances of real life. For me, the best Mayo vehicle is a crunchy lettuce paper or chicken sandwich; For my wife, it’s tuna. Either way, good mayonnaise should enhance our food.

I usually support what you pay for, but surprisingly, although I am sure that the most expensive mayonnaise uses high -quality and morally source ingredients, my taste buds have not always been able to know the difference; Some low -price options are offered as well as their excellent counterparts. Although I discovered that there are some options worthy of stores that deserve a place in a home store for rest, there is still a special magic for homemade mayonnaise that cannot be repeated in the factory.

The best mayonnaise

better All rounded:
Japanese Kinko Kinko

4.50 pounds for 500 g in Waitrose (90p/100g)
4.55 pounds for 500 grams in Okado (91p/100g)
★★★ ☆☆

This really packs a punch, but it is one of the most addicted options. Of course from the Sake Lees (mash from the remaining grains made by a reformer), which brings a unique depth, this is sweet, acid, salty, and contains a profile rich in tami enhanced MSG and vegetable oils (soybeans and extravagance), while the mustard adds the complexity. With a 17 % high egg yolk content, this is rich and sick, making it a good option if you want a complete flavor. It is also a good price compared to its main rival, KewPIE (see below).

Better boasting:
Mayonnaise Deloyes

3.25 pounds for 250 grams in Okado (1.30/100 grams)
3.30 pounds for 250 grams in Waitrose (1.32/100 grams)
★★★★

The color of the pale mustard with a distinctive smell of white vinegar and eggs and a dijon mustard. Good but loose emulsion, this has a natural sweetness with no additional sugar – refreshing change. Vinegar acidity is clear, but it does not overcome it, while Dijon really protrudes, as it fell as a pathological punch. The closest you have tried homemade, with classic ingredients and lemon juice instead of focusing. It also uses sunflower oil instead of rampant seed oil, which I prefer for environmental reasons due to low pesticide levels and natural herbs installed in sunflower.

The best deal:
Tesco mayonnaise

99p for 500 ml in Tesco (20p/100ml)
★★ ☆☆☆

Paral ivory in color and shiny. The smell is eggy and acid, and perhaps because of the soul vinegar, and thick, with a slight consistency that resembles gel from cornstarch. When taste, it’s very sweet but still enjoyable, with a clear acidity of vinegar that is not overpowered. There is also a hint of lemon. Cheap (how to make such a supermarket like this cheap food and at what cost?), But it is very good to the bottom of the price.

The rest …

Mayonnaise Delsford membership

6.50 pounds for 175 grams in Okado (3.71/100 grams of pounds)
★★★ ☆☆

Dairy cream, with a nice egg smell. This was the only tested mayonnaise that had no strong acid smell. It contains a light, partially thick tissue with xanthn gum, which may be used to operate safely and avoid separation. Sweet but enjoyable, with a balanced acidity and a pleasant complexity of mustard and olive oil. It is a good option, but it is a little disappointing given the very high price, especially since I usually find that the organic mayonnaise is to be the league championships before the traditional options.

Mayo Dr Will’s Classic

2.50 pounds for 170 g in ocado (1.47 pounds/100 grams)
★★★ ☆☆

Beautiful color is insulted with mustard seed stains. Siphone, with complex notes of eggs and mustard, are thick, with a slight gel -like consistency. Natural natural sweet taste with a sour kick, although apple cider vinegar does not come clearly, perhaps due to the addition of concentrated lemon juice and white vinegar. Generally, a good founder does all, with balanced flavors and a loose texture that maintains a good emulsion. Nice option, although it is not heavy. Certified B-Corp, which means that it meets the standards of social and high environmental performance.

Mayonnaise Kipe

4.95 pounds, for 470 grams (500 ml) in Sensbury (99p/100ml)
5.90 pounds for 355 ml in Amazon (1.66/100 mm pounds)
★★★ ☆☆

Casic color, with a low pink color of red wine vinegar. The eggs dominate the smell with a sharp acidity. Familiar and thick, with good consistency, sweet, with a noticeable acid tang. Mustard and a mixture of vinegar (spirit, apples and red wine) add depth and complexity. It gives the high egg yolk content by 14 % rich and satisfactory texture, and its rich flavor is strengthened by MSG and Edta Calcium Edta. Despite its industrial production using Caged Hens, the popularity of KWPIE can stem from identifying its brand as much as the distinctive flavor.

The real mayonnaise Hilman

2.28 pounds for 400 g in ASDA (57p/100g)
2.80 pounds for 400 g in Tesco (70p/100g)
★★ ☆☆☆

The pale white cream, with acid smell and hidden eggy notes. It contains thick texture and gel -like vibrations. It is very sweet but nice, with a balanced acidity and a mustard hint in the background. Although it contains Disodium Edta Calcium, there is nothing particularly concerned about the ingredient menu. Generally, a classic and non -offensive option.

Hinz mayonnaise is good seriously

2.90 pounds for 540 g in Tesco (54p/100g)
3.40 pounds for 540 g in sainsbury’s (63p/100g)
★★ ☆☆☆

Snow white in color (indicate that a little egg yolk is used in the recipe), with an odor of vinegar and eggs. Light texture, but harsh from added starch. Moderate sweet, with a balanced acidity and exact eggs, it’s less salty than others. While it is neutral and non -offensive, the total flavor is somewhat nice and inspiring. Such as hellmann’s and kewpie, it contains Disodium Calcium. If you are looking for Mayo without a strong personality, this will fit the bill, but it reduces if you want depth and wealth.

M & S Collection Mayonnaise

3.25 pounds for 165 grams in Okado (1.97 pounds/100 grams)
★★ ☆☆☆

Beautiful pale yellow with a strong odor. The texture is loose but well emulsion, and there is a hidden sweetness, but the acidity dominates, with a little complexity of mustard and olive oil. In disappointing, the olive oil did not add the depth that I was hoping, and the dominant flavor was vinegar. Maya is nice enough, but it is no less than price expectations.

Real mayonnaise stokes

4 pounds for 345 grams in Waitrose (1.16/100 grams)
15.95 pounds sterling for 3 x 345 grams in Amazon (1.54/100g)
★★ ☆☆☆

A pale and shiny ivory color. The smell is permeable with acetic acid, the texture is thick and slightly resembles the gel. Very sweet and very touch, although mustard and olive oil bring some complexity. Made of British entire eggs, it contains more flexible texture than others, but it is still a good emulsion, although there is some large oil-Fox separation.

2.75 pounds for 500 ml in Waitrose (55p/100ml)
★ ☆☆☆☆

The pale yellow custard (colored with sweet pepper), with the acidic smell completely from the soul vinegar. The texture is thick and slightly full, and it is somewhat sweet, despite a touch of acidity. The mustard flavor adds a hidden complexity. Do not add olive oil by 5 % and not justify the price, which makes it frightening in general.
